NickyDi's Indian Pasta Sauce

 I first prepared this recipe for my "new family" ( my in-laws) Being the "well-trained" Indian wife that I was, prompted me to add a dash of spice on anything and everything, as you will find while you peruse through my recipes . In my attempt to create a dish that was not just bursting with flavor but was familiar enough to both my "new family" and myself, I founded the most-cooked-recipe in our home. They love Pasta and I love spices! It was an incredible flavor the first time we tried it! Couldn't believe my luck!! And, then we made it a million times after and it is still our favorite recipe !  We hope it will be yours as well!

NICKYDI'S INDIAN PASTA SAUCE

 Preparation: 1 hr. Serves 4 people

Ingredients:

  • 3-4 Dried Red Chilies(optional for an extra touch of spice!)
  • 1 Medium Onion (chopped)
  • 16 OZ. Sweet/Hot Italian Sausage (Or vegetarian sausage/eggplants)
  • 1/4 cup Tomato Paste
  • 1 tbsp Ginger (minced)
  • 1 tbsp Garlic (minced)
  • 1 tbsp Sugar
  • 1.5 tbsp NickyDi's Pasta Sauce Mix (adjust to taste)
  • 1 tsp Salt (adjust to taste)
  • 1/2 cup water
  • 4 large Tomatoes (2 pureed & 2 diced)
  • 1/2 cup Cilantro/Parsley (chopped)
  • 1 lb Spaghetti

 STEP 1: In a large saucepan, heat cooking oil, add chilies, let it sizzle for 30 seconds. Add chopped red onion and stir fry until brown on the edges. Add Sweet Italian Sausage or Vegetarian sausage (or Eggplants) & cook for 6-8 mins, or until meat is no longer pink on the outside. 

 STEP 2: Add tomato paste, minced ginger & garlic, sugar, NICKYDI'S PASTA SAUCE MIX & salt. Cook for 4-5 mins on medium high heat or until oil forms on the edges of the pan.

 STEP 3: Add water to deglaze the pan & stir in the tomatoes & the finely chopped herbs. Cook for 25-30 mins, Stirring every 5 mins to ensure sauce doesn't stick to the bottom of the pan. Once the sauce has thickened to your liking, serve warm with Spaghetti or any other pasta of your choice. Sprinkle with fresh Parmigiano reggiano.
